Who doesn’t love fried balls of dough coated in sugar?

There’s a ton of recipes for cinnamon donuts out there, but what makes THIS recipe a winner is how easy it is! These dangerously moreish vegan cinnamon sugar donut bites are low in fat but certainly not in flavour. Soft, doughy centre, slightly crisp on the outside, these tiny little vegan donut bites make a perfect on-the-go snack or a delicious breakfast treat that the whole family will love. And to make things EVEN better, there’s no yeast involved meaning no rising is required! All it takes is a few simple ingredients and 20 minutes of your time!

If you’re not too keen on cinnamon, roll them in plain golden caster sugar or better still, drizzle them with white glaze icing or fill with your favourite jam. If you want to go that extra mile, cover them in melted chocolate and roll them in your favourite sprinkles or desiccated coconut. Yuuuuum!

When you come to roll the dough into equal-sized balls, bear in mind that the dough will expand when fried. Therefore, I recommend that they are no larger than 3 cm in diameter as they will double in size when immersed in oil.

Place the vegan spread and soya milk in a small saucepan and melt over a medium heat. Stir and place aside.

In a bowl, combine the flour, baking powder, salt and sugar, then add in the melted mixture together with 2 tablespoons of coconut oil and 1 teaspoon of vanilla extract. Stir the mixture with a fork until it forms a thick dough (the dough will be a little wet).

Divide the dough and roll into small balls (mine were around 2-3 cm). Heat the sunflower oil in a medium-sized deep pan, wait till it reaches 180°C then turn it right down. Using a slotted spoon carefully place a couple of dough balls at a time into the hot oil and cook for around 4 minutes, or until golden, turning occasionally. Once cooked, roll warm doughnut balls in the cinnamon sugar mixture. Best served warm. Enjoy!

50g Vegan spread
240g Plain flour
1 tsp Vanilla extract
1½ tsp Baking powder
