Mince the garlic using a garlic press and place into a bowl. Add the lemon juice and let it sit for a bit. This helps make the garlic “linger” in your mouth less.
Place all the remaining into a food processor and pulse on high speed until desired consistency. I like to pulse mine for somewhere between 20-30 seconds as I like when the spread has some cauliflower chunks still in it. If you are making a dip, and want it much smoother, just pulse for longer.
Once the desired consistency is achieved, stir in the garlic and lemon mixture. Taste and adjust seasoning as needed.
