Easy Strawberry Jam (No Pectin & Small Batch)

- 300 g strawberries
- 100 g golden caster sugar
- 1/2 lime, juice only
- 1 tsp vanilla extract
- 1 tsp cornflour
Place strawberries in a pan and mash with a fork, add sugar, vanilla extract and lime juice.
Bring to the boil then simmer on low heat for 10 minutes then add cornflour and stir quickly.
Simmer for 5 more minutes, take off the heat and transfer into a sterilised jar.
