Ingredients
For the dough
120mlsoya milk
50gvegan spread
240gplain flour
1tspvanilla extract
1½tspbaking powder
pinch of salt
50ggolden caster sugar
2tbspcoconut oil
For the sugar coating
½tspcinnamon
3tbspgolden caster sugar
For frying
vegetable oil
Instructions
Place the vegan spread and soya milk in a small saucepan and melt over a medium heat. Stir and place aside.
In a bowl, combine the flour, baking powder, salt and sugar, then add in the melted mixture together with 2 tablespoons of coconut oil and 1 teaspoon of vanilla extract. Stir the mixture with a fork until it forms a thick dough (the dough will be a little wet).
Divide the dough and roll into small balls (mine were around 2-3 cm). Heat the sunflower oil in a medium-sized deep pan, wait till it reaches 180°C then turn it right down. Using a slotted spoon carefully place a couple of dough balls at a time into the hot oil and cook for around 4 minutes, or until golden, turning occasionally. Once cooked, roll warm doughnut balls in the cinnamon sugar mixture. Best served warm. Enjoy!
