In a bowl, combine the grated courgette, oat flour, soy sauce, smoked paprika, garlic puree, salt and pepper.
Divide the mixture into 4, then shape each portion into a ball. Then, using the palms of your hands, flatten the ball into a patty.
Heat a little olive oil in a pan over medium heat. Fry the fritters for around 3-4 mins on each side or until golden brown.
