Vegan Marshmallow Cream (Marshmallow fluff)

Ingredients

  • 50 ml aquafaba
  • 1/2 tsp cream of tartar
  • 1/2 tsp vanilla extract
  • 1/4 cup sugar
  • 1/4 tsp xanthan gum

Instructions

  • Place the aquafaba, vanilla extract and cream of tartar into a bowl and whisk until foamy.
  • Slowly add in the sugar and xanthan gum and continue to whisk until stiff and glossy - when you lift the beater the fluff should hold a stiff peak, even if you jiggle the bowl!
  • Transfer into a jar and keep refrigerated for up to a week.
