Vegan Leczo (Pepper and courgette stew)

Ingredients

  • 3 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 red bell peppers
  • 2 green bell peppers
  • 2 courgettes
  • 2 tsp paprika
  • 1/4 tsp cajun pepper
  • 1/2 tsp chilli flakes
  • salt and pepper to taste
  • 1 garlic clove, finely chopped
  • 1 tin chopped tomatoes
  • 50 ml water

Instructions

  • Heat the oil in a large frying pan. Once hot, add the onions and fry for 2-3 minutes until they begin to soften.
  • Slice the red and green peppers. Add to the pan and fry over low heat for around 5 minutes.
  • Chop the courgette into small pieces, add the pan together with the paprika, cajun pepper, chilli flakes, salt and pepper stir to combine and cook for further 3-4 minutes.
  • Transfer the mixture into a large pot. Add the garlic, tomatoes and water. Cook over low heat for 20-25 minutes.
  • Serve warm with a slice of bread.
