Heat the oil in a large frying pan. Once hot, add the onions and fry for 2-3 minutes until they begin to soften.
Slice the red and green peppers. Add to the pan and fry over low heat for around 5 minutes.
Chop the courgette into small pieces, add the pan together with the paprika, cajun pepper, chilli flakes, salt and pepper stir to combine and cook for further 3-4 minutes.
Transfer the mixture into a large pot. Add the garlic, tomatoes and water. Cook over low heat for 20-25 minutes.
Serve warm with a slice of bread.
