Vegan chocolate cupcakes (halloween edition!)

Enchant the kids with these devilishly decorated, scarily delicious, vegan chocolate cupcakes. Yes, I said it. Vegan. Chocolate. Cupcakes. Do I have your full attention? Excellent.

I love Halloween. I love it because it means Christmas is only just around the corner and I can barely contain my excitement for it all. And yes, you guessed it right. I’m the type of person to listen to Christmas music in October, don’t hate. But this post is not about Christmas. It’s all about Halloween and spooky treats.

So, I inherited a major sweet tooth—for chocolate. Which is why I don’t do the standard pick and mix sweets for trick or treaters. If you knock on my door, you always get some kind of chocolate. And this year, it’s in cupcake form. Because chocolate is life.

These vegan chocolate cupcakes really are the bomb! Oh, and have I mentioned that this is an incredibly quick and easy recipe that only requires simple ingredients you likely have on hand right now?

Vegan chocolate cupcakes (halloween edition!)

Perfectly fluffy, tender & crumbly on the inside

Ingredients

For the cupcakes

  • 1 cup soya milk
  • 1 tsp apple cider vinegar
  • 3⁄4 cup sugar
  • 3⁄4 cup vegetable oil
  • 1 cup plain flour
  • 1⁄2 cup cocoa powder
  • 3⁄4 tsp baking soda
  • 1⁄2 tsp baking powder
  • 1 1⁄2 tsp vanilla extract

Decoration

  • 1 tub buttercream style icing Betty Crocker tub icing is vegan
  • 16 edible decorative eyes

Instructions

Chocolate cupcakes

  • Preheat the oven to 175°C, gas mark 4 and line a muffin tin with paper baking cups.
  • In a large bowl, whisk together the soya milk and vinegar, then set aside to curdle before adding sugar, vegetable oil and vanilla extract to the mixture. Beat until frothy and set aside.
  • In a separate bowl, whisk together the remaining dry ingredients. Once combined, add the dry mixture to the wet mixture (I do it in two batches beating until smooth).
  • Once combined with no lumps remaining, pour the batter into prepared baking cups, filling them to three quarters full.
  • Bake in the middle of the oven for around 18 to 20 minutes, or until a toothpick inserted into the centre of one of the cupcakes comes out clean. Take out of the oven and transfer onto a cooling rack and allow to cool completely before decorating.

Decoration

  • To frost the cupcakes, transfer the icing into a piping bag fitted with a large plain nozzle and pipe a blob of icing onto each cupcake. Holding the bag upright over the centre of the cupcake, pipe a tall mound of icing, then pull the tip away to form a small peak on the top before sticking two eyes on each one.

This avocado, cannelloni & lime dip takes only 5 m This avocado, cannelloni & lime dip takes only 5 minutes to make and oh my goodness it is GOOD! Perfect for wraps or for dipping crackers or crudités!  You’ll need:
* 1 avocado 
* 1 can cannelloni beans
* 1/2 lime (juice only)
* 1 tsp tahini
* 1 tbsp extra virgin olive oil
* 1 small garlic clove
* Chilli flakes, salt, pepper and turmeric to taste  Instructions 
Scoop the avocado flesh into a blender or food processor. Add the beans, like juice, tahini, oil and garlic and blitz until smooth. One of the most popular recipes on my blog last mo One of the most popular recipes on my blog last month is this Vegan Egg Mayo sandwich filler. I loveeee a good sandwich! 🌱😍  Ingredients
* 280 g tofu firm or silken, depending on preference
* 2 tbsp vegan mayonnaise
* 1/2 tsp black pepper
* 1 tsp black salt
* 1 tsp turmeric
Instructions
* Chop the tofu into a small cubes then using a fork, lightly mash.

* Add the tofu to a large bowl along with the vegan mayonnaise, black salt, pepper and turmeric. Mix until combined. Taste and add more salt and/or pepper to taste. 

* Store in the fridge for up to 3 days or enjoy right away!

It’s vegan, gluten-free and oh so delicious! 🥥  What I love most about this recipe is how easy it is to make. As a new mum I find it hard to find the time to make nutritious meals so the idea of chucking everything into a blender to make a delicious meal is really appealing.  Thanks to the frozen bananas this smoothie bowl is basically a bowl of soft scoop ice cream. It’s a balanced recipe that’s perfect for breakfast or dessert. The new Protein Drink Mix - Vegan from @herbalifeuk not only adds to the flavour but it’s also high in protein, contains 22 vitamins and minerals AND it’s gluten-free and sugar-free!
For the smoothie:
• 1.5 servings (42g) Herbalife Nutrition Protein Drink Mix - Vegan (Vanilla flavour)
• 1 frozen green banana (using ripe bananas will alter the flavour)
• 50ml coconut drink + 100ml water (adding more if you need)
• 1.5 tbsp desiccated coconut
Toppings:
• 8 whole almonds
• 1 tbsp flaked almonds
• 1 tbsp desiccated coconut
• 1⁄2 tbsp almond butter
• vegan white chocolate chunks
Method:
Place all of the smoothie ingredients into a blender and pulse until smooth, for around 30-60
seconds.
