1-bowl Black Bean Brownies

23rd January 2018 by letseatsmart Leave a Comment

Meet my new favourite brownies, black bean brownies.

I’ll admit they aren’t the sexiest brownies around, but they make up for their humble appearance with their scrumptious chocolaty flavour. They are a great (and very sneaky haha!) way to get your kids to eat more veggies too! Chocolaty, naturally sweet, rich and tender brownie that is actually good for you. Have I convinced you of how good this recipe is yet?

This is yet another, 1-bowl recipe! It also requires very simple ingredients you likely have on hand right now. Amazing, right?

The base for these delicious black bean brownies are… surprise, surprise…black beans! As well as peanut butter and oats. Good news! These black bean brownies are naturally sweetened with a little maple syrup and, yummy coconut sugar.

The chocolate flavour comes from cocoa powder and vegan dark chocolate chips. Lots of chocolate chips. Because chocolate is life.

And, if you’re a big chocolate lover, why not add a thick layer of chocolate frosting on top? You’re just going to fall into chocolate heaven. Yum!

  • 1/2 cup plain rolled oats
  • 1/2 cup dark chocolate chips
  • 1/3 cup coconut palm sugar

  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • pinch of salt

Instructions

  • In a food processor, combine all of the ingredients except chocolate chips and pulse until smooth.
  • Stir in majority of the chocolate chips (leave around 1 teaspoon for later) and mix.
  • Pour the brownie mixture into the baking tin, and smooth out the top using a silicone spatula. Sprinkle the remaining chocolate chips on top of the cake.
  • Place in the oven and bake for around 20 minutes. Once out of the oven, let it cool all the way. I know! It’s tough.

AD | This “Raffaello” inspired almond coconut AD | This “Raffaello” inspired almond coconut smoothie bowl is an absolute must! It’s vegan, gluten-free and oh so delicious! 🥥 What I love most about this recipe is how easy it is to make. As a new mum I find it hard to find the time to make nutritious meals so the idea of chucking everything into a blender to make a delicious meal is really appealing. Thanks to the frozen bananas this smoothie bowl is basically a bowl of soft scoop ice cream. It’s a balanced recipe that’s perfect for breakfast or dessert. The new Protein Drink Mix - Vegan from @herbalifeuk not only adds to the flavour but it’s also high in protein, contains 22 vitamins and minerals AND it’s gluten-free and sugar-free!
For the smoothie:
• 1.5 servings (42g) Herbalife Nutrition Protein Drink Mix - Vegan (Vanilla flavour)
• 1 frozen green banana (using ripe bananas will alter the flavour)
• 50ml coconut drink + 100ml water (adding more if you need)
• 1.5 tbsp desiccated coconut
Toppings:
• 8 whole almonds
• 1 tbsp flaked almonds
• 1 tbsp desiccated coconut
• 1⁄2 tbsp almond butter
• vegan white chocolate chunks
Method:
Place all of the smoothie ingredients into a blender and pulse until smooth, for around 30-60
seconds.
Transfer into a bowl and decorate with whole and flaked almonds, desiccated coconut and white choc chunks before drizzling with the almond butter. #smoothiebowl #coconut #raffaello #smoothie #protein #proteinsmoothie #proteinshake #vegan #veganuk #veganfood #veganrecipes #vegandietmealplan #veganbreakfast #vegansnacks #foodphotography #foodstylist #foodstagram #veganprotein #veganuary #veganlife #friendsnotfood
