Meet my new favourite brownies, black bean brownies.
I’ll admit they aren’t the sexiest brownies around, but they make up for their humble appearance with their scrumptious chocolaty flavour. They are a great (and very sneaky haha!) way to get your kids to eat more veggies too! Chocolaty, naturally sweet, rich and tender brownie that is actually good for you. Have I convinced you of how good this recipe is yet?
This is yet another, 1-bowl recipe! It also requires very simple ingredients you likely have on hand right now. Amazing, right?
The base for these delicious black bean brownies are… surprise, surprise…black beans! As well as peanut butter and oats. Good news! These black bean brownies are naturally sweetened with a little maple syrup and, yummy coconut sugar.
The chocolate flavour comes from cocoa powder and vegan dark chocolate chips. Lots of chocolate chips. Because chocolate is life.
And, if you’re a big chocolate lover, why not add a thick layer of chocolate frosting on top? You’re just going to fall into chocolate heaven. Yum!
1-bowl Black Bean Brownies
Ingredients
- 1 can 400g black beans
- 1/2 cup plain rolled oats
- 1/2 cup dark chocolate chips
- 1/3 cup coconut palm sugar
- 1/4 cup smooth peanut butter
- 1/4 cup coconut oil
- 3 tbsp cocoa powder
- 1 tbsp maple syrup
- 2 tsp vanilla extract
- 1 tsp baking powder
- pinch of salt
Instructions
- Preheat the oven to 175C / Gas Mark 4. Line a baking tin with baking parchment and set aside.
- In a food processor, combine all of the ingredients except chocolate chips and pulse until smooth.
- Stir in majority of the chocolate chips (leave around 1 teaspoon for later) and mix.
- Pour the brownie mixture into the baking tin, and smooth out the top using a silicone spatula. Sprinkle the remaining chocolate chips on top of the cake.
- Place in the oven and bake for around 20 minutes. Once out of the oven, let it cool all the way. I know! It’s tough.
