This rainbow smoothie is not only fun to look at – it is packed with tons of fruit and it is absolutely delicious too!
I don’t know about you, but there is just something about colourful food that makes me feel joyful. I know this isn’t the quickest smoothie recipe, and let’s be honest, you probably won’t be making it for breakfast every single day BUT this type of smoothie would be perfect for special occasions such as birthdays, garden parties or simply to celebrate the arrival of Spring/Summer.
To make this rainbow smoothie work, you need to make sure that the layers are thick enough so that they don’t blend together when you pour them on top of each other. To achieve this, I used frozen banana as the base for each layer. If you’re making it for yourself rather than the kids, a good way to achieve a thicker base is to also add protein powder. I tried it with both – 1/2 scoop of protein powder in each layer and no protein at all, and both worked really well.
When it comes to rainbow smoothies, you can get really creative with the flavours and toppings. You can go for as little as three and as many as seven or eight different colour layers depending on the fruit and vegetables you want to use but try to keep the individual layers relatively simple and avoid mixing complementary colours (such as blue and orange, red and green) as this will make your smoothie go brown. To keep the layers bright and vibrant, only mix primary colours together:
- Red and yellow
- Yellow and blue
- Red and blue
- Blue and yellow
- Red and blue
Once you’ve made your smoothie, you can top it with anything you like – this is where the fun begins! You can add more nutrients, flavour and texture by adding various toppings to your rainbow smoothie.
Rainbow smoothie topping ideas:
- Edible flowers
- Chia seeds
- Oats
- Cut up fruit
- Desiccated coconut
- Nut butters
- Cacao nibs
- Goji berries
There is no better way to get your kids excited about fruit than with this gorgeous rainbow drink.
