Make your own vegan version of marshmallow creme at home in just a few minutes!

The star of this vegan marshmallow cream, or marshmallow fluff as I like to call it, is aquafaba (the liquid in a can of chickpeas), followed by a generous amount of sugar to give it that real sweetness. I’ve also added a little cream of tartar – this will help the liquid foam and fluff up. Adding xantham gum adds structure and helps to form nice, stiff peaks that hold their form for days.

Vegan Marshmallow Cream (Marshmallow fluff)
Ingredients
- 50 ml aquafaba
- 1/2 tsp cream of tartar
- 1/2 tsp vanilla extract
- 1/4 cup sugar
- 1/4 tsp xanthan gum
Instructions
- Place the aquafaba, vanilla extract and cream of tartar into a bowl and whisk until foamy.
- Slowly add in the sugar and xanthan gum and continue to whisk until stiff and glossy – when you lift the beater the fluff should hold a stiff peak, even if you jiggle the bowl!
- Transfer into a jar and keep refrigerated for up to a week.
