Cinder toffee, honeycomb, hokey-pokey, sponge candy – whatever you call it, this recipe for sweet and crunchy vegan honeycomb is the bees-knees. Perfect on it’s own or crumbled into ice cream.
Super easy vegan honeycomb shards
Perfect on it’s own or crumbled into ice cream.
Ingredients
- ⅓ cup vegan spread
- ⅓ cup golden syrup
- ⅔ cup golden caster sugar
- 2 tbsp cold water
- 2½ tsp baking soda
Instructions
- Line a baking tin with parchment paper. Place the butter, sugar, water and golden syrup in a deep saucepan over medium heat until the sugar has dissolved. Once the mixture starts to bubble, stop stirring and allow to boil for around 5 minutes.
- Once the mixture becomes a golden brown colour, add in the baking soda and stir for a few seconds until dissolved. This will make the mixture fizz and expand, so be careful. Quickly transfer the mixture into the parchment paper lined baking sheet and allow to cool and set for around 15-30 minutes.
- Using a knife break the honeycomb into bitesize shards or place in a food processor and sprinkle over your favourite ice cream or dessert.
