Vegan lentil cottage pie

Packed with healthy vegetables and yummy lentils, this vegan cottage pie is far more satisfying than its beef counterpart. This is a truly rich, gluten-free, healthy and comforting vegan cottage pie recipe with lentils and creamy mashed potatoes that everyone will love.

Vegan lentil cottage pie

Ingredients

  • 1.25 kg maris piper potatoes
  • 1 carrot, sliced
  • 1 small onion, finely chopped
  • 3-4 garlic cloves, crushed
  • 1 tin chopped tomatoes
  • 100 g frozen garden peas
  • 400 g lentils
  • 75 broccoli
  • 1 tsp sage
  • 1 tsp thyme
  • 1-2 tsp garam masala
  • salt and pepper to taste
  • 1 tbsp vegetable stock

Instructions

  • Preheat the oven to 200°C. Peel and chop the potatoes into rough chunks, then place into a pan of cold salted water. Bring to the boil, then simmer for around 15-20 minutes. Drain, mash until smooth, season with salt and pepper to taste, then set aside.
  • Place the broccoli, peas, carrots and baby corns into a medium pan of cold salted water over medium heat. Add one tablespoon of vegetable stock, bring to the boil and simmer for around 10 minutes. Add the lentils and tinned tomatoes and simmer for around 20-25 minutes, or until the sauce has thickened, stirring occasionally. 
  • Peel and finely slice the onion and 3 garlic cloves then deseed and finely slice the chilli. Heat 1 tablespoon of olive oil in a large frying pan. Add the garam masala, sage, thyme, onions, garlic and chilli into the pan and fry for 5 minutes. Season to taste, then mix it into the sauce.
  • Transfer the sauce to a baking dish. Spread the mash over the top – you can get creative with the patterns for the top – use a fork to fluff it up or use a piping bag for more intricate designs. The rougher the surface, the crispier it will turn out. Place in the oven for 35-45 minutes or until the top is crispy/golden and bubbling.

* 1 avocado 
* 1 can cannelloni beans
* 1/2 lime (juice only)
* 1 tsp tahini
* 1 tbsp extra virgin olive oil
* 1 small garlic clove
* Chilli flakes, salt, pepper and turmeric to taste  Instructions

* 280 g tofu firm or silken, depending on preference
* 2 tbsp vegan mayonnaise
* 1/2 tsp black pepper
* 1 tsp black salt
* 1 tsp turmeric
Instructions
* Chop the tofu into a small cubes then using a fork, lightly mash.

* Add the tofu to a large bowl along with the vegan mayonnaise, black salt, pepper and turmeric. Mix until combined. Taste and add more salt and/or pepper to taste. 

* Store in the fridge for up to 3 days or enjoy right away!

Thanks to the frozen bananas this smoothie bowl is basically a bowl of soft scoop ice cream. It’s a balanced recipe that’s perfect for breakfast or dessert. For the smoothie:
• 1.5 servings (42g) Herbalife Nutrition Protein Drink Mix - Vegan (Vanilla flavour)
• 1 frozen green banana (using ripe bananas will alter the flavour)
• 50ml coconut drink + 100ml water (adding more if you need)
• 1.5 tbsp desiccated coconut
Toppings:
• 8 whole almonds
• 1 tbsp flaked almonds
• 1 tbsp desiccated coconut
• 1⁄2 tbsp almond butter
• vegan white chocolate chunks
Method:
Place all of the smoothie ingredients into a blender and pulse until smooth, for around 30-60
seconds.
