Cheese made out of nuts. I know what you’re thinking… she’s nuts! But honestly, this tastes like the real deal.
This recipe is no rocket science. It’s super simple. Raw cashew nuts are blitzed with nutritional yeast, salt, garlic powder and a bit of pepper. The garlic powder and black pepper are optional, but they do make a difference to the flavour, so are highly recommended.
The “cheese” flavour comes from the nutritional yeast. Nutritional yeast is a highly nutritious vegan food product with various health benefits which include boosting energy levels and supporting the immune system. It is also high in vitamin B12.
Vegan parmesan cheese is a great topper for all kinds of pasta dishes, pizzas, perfect to stir into a homemade pesto and vegan cheese style sauces!
Vegan Parmesan ‘Cheese’
- 1/2 cup raw cashew nuts
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 black pepper
- Place all of the ingredients into a food processor and pulse into a fine meal.
- Transfer into an airtight container and store in the refrigerator for up to 2 weeks.
