Best thing about this recipe? The batter can be made up to a day in advance and stored in the fridge, ready to fry the following day!
Courgette Fritters
Ingredients
- 2 courgettes, grated
- 3 tbsp oat flour
- 1 tsp soy sauce
- 1 tsp smoked paprika
- 1/2 tsp garlic puree
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- In a bowl, combine the grated courgette, oat flour, soy sauce, smoked paprika, garlic puree, salt and pepper.
- Divide the mixture into 4, then shape each portion into a ball. Then, using the palms of your hands, flatten the ball into a patty.
- Heat a little olive oil in a pan over medium heat. Fry the fritters for around 3-4 mins on each side or until golden brown.
