Requiring only 4 ingredients and around 12 minutes to make, this vegan pesto pasta recipe is a real winner. I know what you’re thinking though. Traditional pesto isn’t suitable for vegans due to one of its key ingredients – parmesan cheese. This is the only tricky part about this recipe. Luckily, brands like Meridian Foods and Sacla have come out with vegan friendly pesto that tastes just like the real thing. Both of these brands are widely available in the UK, I usually get my jars from either Waitrose or Holland & Barrett.
To make this pesto pasta recipe even more filling, why not add crispy pan-fried tofu. Yum!
Creamy pesto pasta
Ingredients
- 2 cups penne pasta
For the sauce
- 2 tbsp soya yoghurt
- pinch of salt
- 3 tbsp pesto
Instructions
- Bring a large pot of salted water to a boil, add the pasta and cook according to package directions.
- Whilst the pasta is cooking, mix all of the remaining ingredients in a small bowl or a mug.
- Once the pasta is cooked, drain the pasta and mix with the creamy pesto sauce, stirring to coat the pasta completely. Enjoy hot or cold.
