Today’s recipe is basically last nights dinner, which I popped in the blender together with some spices and served up on toasted sourdough toast. Friends, let me present you with my newest creation – cauliflower spread. Bold and spicy, which is just the way I like it!

It’s so hearty and flavorful and works well spread on a slice of homemade sourdough toast or served as a dip with assorted raw veggies or baguette slices.



Simple Cauliflower Spread
Ingredients
- 1/2 cauliflower, cooked
- 1 garlic clove
- 1/2 tsp sea salt
- 1 tsp chilli flakes
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 10 ml lemon juice
- 1 tbsp olive oil
Instructions
- Mince the garlic using a garlic press and place into a bowl. Add the lemon juice and let it sit for a bit. This helps make the garlic “linger” in your mouth less.
- Place all the remaining into a food processor and pulse on high speed until desired consistency. I like to pulse mine for somewhere between 20-30 seconds as I like when the spread has some cauliflower chunks still in it. If you are making a dip, and want it much smoother, just pulse for longer.
- Once the desired consistency is achieved, stir in the garlic and lemon mixture. Taste and adjust seasoning as needed.
